Method

1. Combine wine, Wild Country Onion Balsamic Marmalata, tomato paste and bay leaf in a saucepan and heat to combine.

2. Discard the bay leaf.

3. Transfer mixture to a small bowl and chill quickly by setting in a bowl of icy water.

4. Stir in zest, butter and 1/4 teaspoon salt and 1/8 teaspoon pepper with a rubber spatula until incorporated.

5. Preheat grill and line dish with a sheet of foil.

6. To remove bone from the center of the salmon steak cut a line along both sides of the bone.

7. Flip one side over so the tail parts are at opposite ends to each other, similar to ying and yang.

8. Secure the pieces together by running a soaked bamboo skewer through one tail, then through both of the center pieces then through the other tail to create an almost circular effect.

9. Pat fish dry, then brush both sides with oil (2 tablespoons total) and sprinkle with remaining salt and pepper.

10.Grill fish close to heat, turning over once, until just cooked through, 8 to 10 minutes total.

11.Top each steak with 1 - 2 tablespoons of the marinade. Left over marinade can be chilled, covered for 3 days or frozen for a couple of weeks.

"Many New Zealander's still make their own preserves with the produce that grow on trees at home or from family gardens. They tend to make recipes that have been handed down from generation to generation. Our philosophy is not to compete with these people, they love what they do and wouldn't want to change that for the world, but we can add another dimension to these recipes using exciting and not necessarily readily accessible ingredients and introduce our customers to new taste experiences.
