Icing sugar for dusting Wild Country Wild Berry Dessert Sauce!
Method
1. Melt all the butter over a low heat, then leave to cool.
2. Do not over heat the butter so that it starts to separate as this will not give you the best result with the madeleines.
3. Beat the egg, caster sugar and salt in a bowl for about 5 minutes, preferably with an electric mixer until it's light creamy in color and thick.
4. Sprinkle in the flour through a sieve.
5. Fold in the flour, then most of the melted butter.
6. Leave aside a tablespoon of the melted butter for greasing the Madeleine pan.
7. Leave the batter to rest in the fridge for 1 hour, then take out and leave at room temperature for half an hour.
8. Generously brush the insides of the Madeleine tins with the reserved butter.
9. Place about 1 teaspoon of batter in each pan - the batter will spread through the mould so there is no need to spread it.
10. Bake for 5 minutes approximately.
11. Turn out and let cool on a rack then arrange on a plate and dust with icing sugar.
