2 teaspoons white vinegar, paprika & freshly ground black pepper to garnish (optional)
Method
1. Make a sandwich of 1 slice of bread, a slice of ham or bacon and a slice of cheese.
2. Spread a thin layer of Wild Country New Zealand Chardonnay Mustard on the top slice of bread and place mustard side facing down.
3. Repeat this process for the other three sandwiches.
4. Heat the Wild Country New Zealand Extra Virgin Olive Oil Mediterranean and butter in a large frying pan and place the four sandwiches in the pan and cook over medium heat until the bread is lightly golden on one side. Flip and repeat the process on the other side.
5. Remove from heat and place cheese slices on the top of each of the sandwiches and finish under the grill in the oven for a few minutes until cheese is just starting to bubble.
6.In a medium sized saucepan fill two thirds full with water and a good pinch of salt and the vinegar.
7. Bring this to a boil. Break eggs into the water and then turn off and let the eggs poach for 5-10 minutes depending on how runny you like your yolks.
8. Remove from the water and drain all excess water off the eggs.
9. Place an egg on top of each of the toasted sandwiches.
Garnish with paprika and freshly ground black pepper.
