Method

1. Lightly grease a 23cm, 9inchs spring form pan. Cover the outer base and sides of the pan with a double layer of foil.

2. In a food processor, crush the biscuits, then combine the biscuit crumbs, cocoa and melted butter.

3. Spread the mixture over the base of the tin.

4. Clean out the food processor bowl, then mix the egg yolks, vanilla and sugar until they start to lighten in color.

5. Add the ricotta, sour cream, amaretto and flour and process until smooth.

6. Place the mixture in a mixing bowl and fold through the whipped cream.

7. Beat the egg whites until soft peaks form, then fold into mixture, making sure it's well combined.

8. Finally, fold in the melted chocolate.

9. Pour this mixture on top of the biscuit base, then sit this in a deep baking dish.

10.Bake for 1 hour in a 150C, 302F oven.

11.Then remove the tin from the baking dish and let sit in the oven until completely cooled.

12.Refrigerate for at least 1 hour before serving.

To serve drizzle with Wild Country Chocolate Dessert Sauce.

Wild Country expanded its operation in 1998 to include a range of tasty chutneys, jams, relishes and pickles developing recipes and introducing New Zealander's to new tastes. "Many New Zealander's still make their own preserves with the produce that grow on trees at home or from family gardens. They tend to make recipes that have been handed down from generation to generation. Our philosophy is not to compete with these people, they love what they do and we wouldn't want to change that for the world, but we can add another dimension to these recipes using exciting and not necessarily readily accessible ingredients and introduce our customers to new taste experiences.
