The Winemakers Note...
iwifruit packed in May were left to ripen before crushing and pressing in July. The fresh juice is both high in acid and proteins, therefore challenging the wine maker to produce a good wine.
Clarifying and removing protein prior to fermentation ensure a fresh zingy wine fermented cool for 14-16 days, immediately removed from its lees, filtered and bottled immediately, ensures a fresh clean wine.
The Tasting Note...
By nature a very fruity style of wine, like Savignon Blanc, therefore is best enjoyed fresh and young.

This wine is best enjoyed during the day with a Mediterranean lunch or a picnic in the sun.
